Recipe: Lighter Slow Cooker French Onion Soup

There’s nothing better than a delicious soup on a cold winter day. During this weekend’s New England snowstorm, I made one of my favorite healthy soups in my slow cooker, French Onion Soup, which is from the Fix-It and Forget It Lightly cookbook. Not only is this recipe easy, I usually have the majority of the ingredients already at home, so I can throw it together pretty easily.

 Ingredients:

  • 3 medium onions, thinly sliced
  • 1 tbsp. butter (I use I Can’t Believe It’s Not Butter)
  • 2 tbsp. vegetable oil
  • 1 tsp. salt
  • 1 tbsp. sugar
  • 2 tbsp. flour
  • 1 qt. fat-free, low-sodium vegetable broth (you can use beef broth instead if you prefer)
  • 1/2 cup dry white wine (I used Trader Joe’s Sauvignon Blanc)
  • slices of French bread
  • 1/2 cup grated fat-free Swiss, or Parmesan, cheese (my grocery store didn’t have fat free, so I went with regular)

Directions:

  • Saute onions in butter and oil in covered skillet until soft
  • Uncover and add salt and sugar; cook 15 minutes
  • Stir in flour; cook 3 more minutes
  • Combine onions, broth and wine in slow cooker
  • Cover and cook on low 6-8 hours
  • Toast bread; sprinkle with grated cheese and then broil (I did this in a toaster oven)
  • Dish soup into individual bowls, then float a slice of broiled bread on top of each serving of soup
