In honor of Cinco de Mayo, we went with a Mexican meal for dinner tonight – Cilantro Lime Chicken. This slow cooker recipe is so easy. Just put some salsa, taco seasoning, lime juice and fresh cilantro in the slow cooker with chicken breasts, set on low for 6-8 hours, go to work and come home to enjoy. Top it off with items like jalapeños, black beans, sour cream and more to make it your own taco, or put it on top of a salad if you want to keep it a bit healthier. Ingredients:
- 1 16 ounce jar of salsa
- 1 1.25 ounce packet of taco seasoning
- 1 lime, juiced
- 3 tablespoons fresh cilantro, chopped
- 2 pounds boneless, skinless chicken breasts
Directions:
- Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine.
- Add the chicken breasts, and stir to coat with the salsa mixture.
- Cover the cooker, set to High for about 4 hours or Low for 6-8 hours.
- Shred chicken and serve with soft taco shells, guacamole, sour cream, jalapeños and cheese (or whatever you like!)
